Weekly Meal Plan

So this last week I did very well sticking to my meal plan, I didn't have to return to the store for anything and didn't order out unplanned or anything. I am very proud of myself. Lol of course I wasn't home on Saturday of last week. Well here is this weeks meal plan. I've ran it past my DH and he has a agreed to it so I will be going to the store to do my weekly grocery shopping. Wish me luck on sticking to the plan for the next 7 days.
Dinner Schedule for March 6th thru March 12th 2010


Saturday Mar 6th – Enchilada Stack

Sunday Mar 7th – Chicken Gyros

Monday Mar 8th – Ranch House CrockPot Pork Chops with Parmesan Mashed Potatoes

Tuesday Mar 9th – Southwestern Shredded Beef with taco fixings

Wednesday Mar 10th – Cheeseburgers (as long as the nice weather holds out), if not we could probably make thing inside instead.....

Thursday Mar 11th – Homemade nachos with some guacamole fresco. This was one of my sister's and my favorite meals growing up. My dad and brother didn't like it so we only had it when they went camping or backpacking. And since a lot of the times I went camping and backpacking with them it didn't happen very oftern. My mom enjoyed it also.

Friday Mar 12th – Baked chicken with Angel Hair pasta with herbs and rolls.  I am going for simple for friday, while I do get off at 5 usually (and home by 5:30) my DH plays volleyball at the mormon church at 7 so I have to be able to have it all done and eaten by 6:30 or 6:45 at the latest. Really I don't like having to cook the moment I walk in the door. I guess I should consider making a crockpot meal every friday at least until my husband's work schedule changes and it puts him on swing for six months.

Saturday Feb 27th – out of town so no dinner menu plan

Sunday Feb 28th – first night back went easy chicken and cheese quesadilla with homemade guacamole and some sour cream of course

Monday Mar 1st – steaks with mashed potatoes, cheddar parmesan biscuits and green beans

Tuesday Mar 2nd – Marion’s chicken and broccoli rice skillet

Wednesday Mar 3rd – DH’s chicken fettuccini from scratch

Thursday Mar 4th – Spaghetti with corn

Friday Mar 5th - sautéed tilapia over rice

Back

I spent all of last week sick, including my birthday on friday. I am not 100% now but I am much better, mainly it's a little bit of a cough and some lethargicness left hanging around. Unfortunately for my co-worker Marion, it meant I missed most of the work week, though I am sure she prefers that than to getting what I had. And to top it off I had to be tested for tb at the being of the week, since I had been exposed  to it and my sole symptom at the time was coughing. About mid week lots more symptoms came to join in on the fun but by then that was the day I got my tb test results. All negative thank goodness. And by the end of thursday I had pretty much no voice. My DH insisted we go on his schedule trip anyways.So I got a weekend of rest and silence I would NOT have gotten at home with two little boys running around. We relaxed, soaked in the hot tub and caught a movie. Cop Out not really a movie I would've picked to see in theatre but I didn't feel like waiting the hour and a half for the other movie to start. Cop Out was funny though and I would recommend watching it if you like comedies. He took me out to a really like nice dinner for my birthday also. He took me to a museum which is awesome, I enjoy museums because I am weird like that. Now we are back home with our two kids and back to work tomorrow.

A week in planning.

Dinner Schedule for February 20th thru February 26th 2010




Saturday Feb 20th – baked chicken, chicken and herb tortellini with Alfredo sauce, green beans and rolls

Sunday Feb 21st – roasted tomato baked turkey breast with baked ziti and garlic bread with corn

Monday Feb 22nd – roast beef with twice baked potatoes, salad and drop biscuits

Tuesday Feb 23rd – cheeseburgers and potato salad with corn (hopefully the weather cooperates and we can use our bbq grill)

Wednesday Feb 24th –  chicken tacos.

Now, friday is my birthday and I am not suppose to know but they called to confirm the reservations so my DH planned a surprise birthday trip for me. My BIL will be here with the boys but I don't think he cooks much more the breakfast stuff.  So there will be plenty of breakfast stuff here and stuff like frozen pizza, chicken nuggets, corn dogs, hot dogs, can chili and the like. So the boys don't starve. I haven't told DH that his birthday surpise isn't such a surprise now. But it makes him happy to think it's this big surprise, and all I really know is he schedule a weekend stay at one of the time share resorts. And that he got me friday off from work. I figured that my BIL is watching the boys since before when I didn't know the surprise my DH told me he only told my BIL because he had to know and people can't keep their mouths shut. lol.  And I am not planning dinner for the 25th since the check in date was the 25th. But if we are here for dinner there will probably be chicken tacos for left overs.

Last week I sucked at my premenu planning and sticking to it. This week should be easier it has to less days I have to stick to lol.

So Far

This week I have totally failed at my menu planning, that's right I failed and I admit it. I did fine saturday and sunday but monday we had pizza (the frozen kind). Tuesday I went to a friend's Tastefully Simple party and I don't know what my DH made for himself and the boys. So Wednesday ended up being cheese and spinach tortellini with pesto, baked italian chicken and green beans with rolls. Yesterday well yesterday we had blueberry pancakes for dinner. I didn't feel like cooking last night and DH was kind enough to make pancakes. The boys were happy they really like blueberry pancakes and they enjoyed eating my homemade applesauce to go with them. So that brings us to tonight the Bajio chicken with taco fixing will I make it? Well that still remains to be seen.  But whatever we have will be with food I have in the house. I still need to figure out next week but frankly I am just not in the mood. (WARNING: will become a rant if you continue to read) To be honest I've been crabby the past few days. And mainly it's irrational witchiness. Sadly I know I am doing it too and I just can't seem to help it. I have less tolerance now for bs then I normally do which is horrible since I virtually have no tolerance for it to start with. Maybe Marion is right and everything has just built up over time. Maybe I just need a break for a little bit and I will be nicer and fuzzier towards people. Maybe.. Maybe not. Maybe it's a hormonal thing that will balance itself out. And no I am not pregnant so no crazy suggestions like that. The last person who suggested it almost got kicked. I am cranky yes I am being a witch with a capital b yes I am a female and no I am not pregnant.
I really don't understand how my DH can put up with it. I love him he is an amazing guy but last night I was down right hostile. I am not violent kicking comment aside and all. I just get loud when I get mad and I tend to cuss. And when I am cranky I have no patience at all something which is in short supply the rest of the time. Don't get me wrong I have lots of patiences most of the time for my boys and other children. It's the adults I have little to noo patience with. Children are learn adults should have learned it already. And maybe it's just because I am cranky and ranting. Yes I know this is ranting. I will admit it. But adults seem to think embracing the immature spiteful selfish spoiled personalities that some would equate to the proverbal spoiled rich mean girl of high school is okay. But it isn't. It's horrible. Not only horrible because they are suppose to be ADULTS but horrible because they are teaching their children it is okay that they behave so vapidly and spitefully. I do believe people are inherently good that every person no matter how horrible has a speck of decency. My DH disagrees with me on this but I know it's true. If you look hard enough you can find it in anybody. Of course a small amount of goodness doesn't overpower a large amount of evil so to speak. But the people who embrace bad behavior and still think they are wonderful people are stupid and at minmum decieving theirself. Now I guess some people come across their mean girl persona rather naturally but others seem to only embrace it part time. And I ask you, why? And this isn't limited to females guys do it to. Okay maybe not MEAN GIRL persona but their I am a jerk off selfish idoit persona. They both amount to the same thing. And honestly these people wouldn't want to be treated the way they are treating everybody else and yet they do it over and over again. I just can't fathom it. No comprehension on my part. So if somebody anybody can enlighten me please do. Okay ranting finished

Tuesday Feb 16th – grilled bbq chicken with egg salad, peas and biscuits

Wednesday Feb 17th – Pulled Chicken Suiza Sammies

Thursday Feb 18th – Chicken Gyros

Friday Feb 19th - Bajio Chicken and taco fixings

Catching up

    Well, since the boss played mediator at work things have been mellow. Or maybe it's just that I am ignoring anything that might possibly be drama? Either way, things are more mellow in my world. lol. Friday I had a Pink Papaya spa party, it was a lot of fun. Hopefully, Marion will do the girls weekend like she said, but time will tell. I have been lax on posting this weeks dinner schedule, so I will post it now including what I did last night and the night before. Last week the schedule worked fine except I switch the chicken and dumplings to friday and thursday was more left overs. As for if it saved me money, I guess it did but I am not sure yet. I will need to see how it goes for the rest of the month. Everybody wish me luck with this. :) I didn't have any leftovers for lunch today but that's okay, I should have some for tomorrow.
